Valentino and Rocio Soltero are coming back to the neighborhood that supported their cooking for a decade.

The married couple plans to open Mexican Mezcal Restaurant by the end of August 2026 at 15630 SW Boones Ferry Road, Suite 2, in Lake Oswego, roughly two blocks from where they ran Corona Mexican Restaurant for 10 years.

"People already know us," Rocio Soltero told the Lake Oswego Review. "Some customers are asking when we are coming back."

The Solteros lost their Corona location after Summit Orthopedics purchased the Mercantile Drive site to expand its clinic footprint.

Summit CEO Matthew McCreith told the Lake Oswego Review in April that the large restaurant space with ample parking was "ideal for healthcare." Corona had been the first restaurant the couple opened together.

This time, the Solteros are keeping it in the family. Unlike Corona, which involved outside partners, Mexican Mezcal will be run exclusively by Valentino, Rocio, and their children. Valentino Soltero has worked in his family's restaurants for more than 30 years.

The menu will feature traditional Mexican food made from scratch, seafood specials, recipes drawn from across Mexico, and a full bar with a tequila selection. The space at Suite 2 was previously home to Ivy's Pho & Grill.

The restaurant's name is a nod to the couple's roots. Valentino Soltero said they chose "mezcal," the agave spirit, because it connects to where they grew up in Mexico. "Mezcal is a part of Mexico," he said.

He added that the family's focus is on service and on reconnecting with the community that backed them for a decade at their previous spot. "We want to start fresh with just the family," Valentino Soltero said.

No specific grand opening date, hours, or reservation details have been announced beyond the end-of-August target. The restaurant is located in the same Boones Ferry Road commercial corridor where the Solteros built their original following.
